Crab English Cucumber Bites

A Refreshingly Delicious Appetizer

This is a wonderful refreshing seafood appetizer recipe that is easy to prepare, delicious and looks decadent.




1 pound Seatech Chilean Crab Meat

3 Tbsp lite mayonnaise or more

1 Tbsp sour cream

1 small bunch of chives chopped

Zest of one lemon

Juice of 1/2 to 1 lemon

horse radish to taste (optional)

Seasoning salt to taste

1 to 2 English cucumbers

fresh dill for garnish




Put mayonnaise, sour cream, lemon zest, chives, seasoning salt and lemon juice into a bowl and mix thoroughly. Pick over crab meat to ensure there is no shell. Add the crab meat to the bowl and gently mix in with other ingredients. Slice English cucumbers in half inch sections. With a melon ball scoop, scoop out the seeds from half of one side of the cucumber slices. Divide the crab mixture among the cucumber slices placing in the hallowed out half. Garnish with fresh dill and place on a serving tray to serve.


Serving Suggestions:


For a little kick use horseradish cream sauce instead of sour cream

Plain Greek yogurt can be used in place of mayonnaise
