Crab Stuffed Sweet Peppers

Yum Crab Peppers and Guacamole In One Bite

The flavor of crab meat, avocado and sweet bell peppers combine for a delicious seafood appetizer.




1 pound Seatech Chilean Crab Meat

3 Tbsp lite mayonnaise or more

1 Tbsp sour cream

1 bag of sweet mini bell peppers

1 small bunch of chives chopped

Zest of one lemon

Juice of 1/2 to 1 lemon

horse radish to taste (optional)

Seasoning salt to taste

1 Tbsp olive oil

2 large avocados, pitted and smashed in a bowl

garlic powder to taste.




Put mayonnaise, sour cream, lemon zest, chives and lemon juice into a bowl and mix thoroughly. Pick over crab meat to ensure there is not shell. Add the crab meat to the bowl and gently mix together with other ingredients. Add seasoning salt and horse radish (optional) to taste. Cover with plastic wrap and place in the refrigerator.


Next place the avocado in a bowl with the olive oil, a small squeeze of lemon juice and mash to make guacamole. Add garlic powder to taste.


Remove the stems on the peppers, slice in half and remove the seeds. Place a thin layer of guacamole inside the pepper halves. Spoon the crab mixture over the guacamole, place on a serving tray and serve.
